Recipie for Egg free mayonnaise
Egg-free mayonnaise - sometimes one finds oneself without eggs in the house, or for safety reasons one doesn't want to use raw eggs - so here's a way of making homemade mayonnaise without eggs.
Ingredients: 1/2 glass of whole milk at room temperature (if the milk is too cold the mixture can curdle), one glass of Marqués de Guadalmina Extra Virgin Olive Oil, a pinch of salt, a dash of wine vinegar or lemon juice.
Preparation: Put the milk in the glass of a hand blender. Slightly tip the glass and add the olive oil so the oil runs down the side of the glass and floats on the milk. Add the salt. Put the blender right to the bottom and start. When you notice the mixture getting thicker at the bottom, start to slowly raise the blender. Once the whole mixture has begun to emulsify you can add the vinegar/lemon juice and blend some more.
Serving: This makes a very white mayonnaise. If you want it thicker, add more olive oil.
