Olive oil and honey chocolate chip cookie

If you find most cookies teeth-buzzingly sugary and over sickly, change the butter for olive oil and the sugar for honey and you'll get this lighter, errm... dare we say healthier, but still delicious festival of chocolate and hazelnut. And it's really easy to make.

Ingredients:

200ml Marqués de Guadalmina Arbequina Extra Virgin Olive Oil

200 ml of honey

2 eggs

650g flour

7g bakingsoda, dissolved in a little water

pinch of salt

300g good quality cooking chocolate

handfil of roasted hazlenuts

Pre-heat the oven to 170º C. Put the oil, the honey,flour, baking soda mix and salt in large bown and mix well. Once this is all mixed up, add the beaten eggs mixing while you do. Then break up the chocolate into the size chips you like, and mix in this an the hazlenuts (or other type of nuts if you prefer). Then on a large baking tray or trays make your cookies and put in the oven for 10 mins. If you make large cookies, keep them in the oven a little longer. Then take them out and let cool.
