Arbequina Olive Oil Ice cream

6 egg yolks

215g sugar

1/2 litre milk

5g flour

100g Marqués de Guadalmina Arbequina Extra Virgin Olive oil


1. Mix the eggs, sugar and flour in a bowl and beat untill its all white

2. Warm the milk and add the egg/sugar mixture stirring contunually

3. Don't stop stirring and keep the heat on untill the mixture has cooked without seperating.

4. Allow to cool

5. Beat the mixture adding the oil very slowly

6. Either put into an ice cream maker, or freeze and take out from time to time to beat well to break up any crystals until it's frozen


Serving suggestion:

This can be used to accompany savoury dishes or try pouring over a little Pedro Jimenez
